I don't why the standalone export wasn't able to load the sprites and dialogues on the fly, it was no issue in any previous project. But I've managed to fix the issue with the following laborious workaround - 

Now the game is still VERY unfinished - but now it's unfinished with pretty pictures and a fun colour-remapping shader so I'm happy 😮‍💨
